Grilled, deliciously sweet red peppers Posted by Picasa

This is a classic greek summer sidedish. These particular peppers are called "Florina" peppers, from a specific area in Greece. But any sweet, juicy red pepper should do the trick.
What you do is, you take the peppers and grill them in the oven, until the skin is a bit blackish and looks like it can be easily peeled off. Then you wait until they cool down a bit and peel them. If the peppers you are using are bulbous bell peppers, you may want to cut them into thinner slices as well. Finally, you serve them with olive oil, vinegar, chopped fresh parsley and some chopped garlic. Not too much garlic, as it can be overpowering. Excellent with grilled meat!
