The St. Patrick's day special



... although I'm greek, the fiance is swedish and we have no idea why we felt compelled to include St. Patrick in our lives at this specific point.. But hey, anything for a reason to celebrate!
Champ by way of adding fried onion, spinach and leek to creamy mashed potatoes. Top with a bit of butter. very simple and delicious.

hehe I know. I was scouring the fridge for anything green to make the mash more appropriate for the day, and I chanced upon the spinach (actually waiting its turn for when I would be feeling patriotic enough to make spinach pie...), but it actually worked nicely:) Added a great taste to the whole thing. Sadly, I must be suffering from a disorder that prevents me from sticking to recipes as in some cases I should perhaps be doing...
